Question of the Month: Breakfast?

Our Question of the Month comes from a busy mother who is admittedly not a morning person:
"Any ideas what I can fix for breakfast besides cereal and toast and eggs? It is getting a little boring...."
What do you fix for breakfast? Do you have any favorite breakfast foods, or do you enjoy doing something out-of-the-ordinary for breakfast? Does anyone have any make-ahead breakfast ideas?

I have a budding picky eating 14 month old who is on a banana kick. Here's what we've been eating for breakfast for the past 2 weeks -

Buttermilk scrambled eggs
Banana pancakes (I make them in bulk from scratch, store in freezer, then pop in microwave when time to eat)
Homemade Yogurt
Bagel
Banana
Red Grapes
Orange Juice
Milk

Eggs are so easy to change around - over easy, omlet, scrambled, yolk cooked, yolk runny. A variety of things can be put in them too at different times - milk, buttermilk, any kind of cheese, crushed veggie bits, ham pieces, onions, even salsa! No need for eggs to be boring. :)

It takes me all of 5 minutes to make a large breakfast - pop the frozen pancake in microwave for 2 minutes, stir buttermilk in egg, pour in heated pan and cook on medium low for 4 minutes (stirring at 2 minutes), grab some grapes, peel a banana, spoon out some yogurt, grab my bagel, pour drinks and I'm done. :)

Other easy breakfast items include:

precooked french toast (precook a lot then freeze for reheating)

cook bacon in the oven (sooo much easier than frying!)

Biscuits with homemade white gravy (Formula L makes great biscuits with just adding milk and cooking. Make white gravy by stirring milk, butter, and flour in a heated pan, cook till flour is done with desired thickness)

Non-Cook breakfast items we eat are:
Cereal (love love love Strawberry minibites)
Apple slices
Oranges
Grapes
Bananas
Peaches

People tend to forget to include enough fruits in their diet. Breakfast is a perfect time to add them in whole. :)

Dear Editor, Ideas for Breakfast that I have used are Rice cakes with jam that seem to be really tasty. Also some granola with yogurt and blueberries are quite filling. Fruit Shakes are great with milk and different fruits that each person can request for their breakfast treat. Hope this helps. An older reader.

Dear Editor,

We love fruit for breakfast here, followed by a whole-grain cereal. Sometimes we make "green smoothies", too, which are fruit and mild-tasting greens run through the blender with water or juice. It's a great way to sneak in something green for picky eaters!

Thank you everyone for your good ideas. This is from an a reader who emailed a comment:
'Regarding some breakfast ideas: years ago when I didn't have to worry about cholesterol, I sometimes would serve grilled ham and cheese sandwiches for breakfast. In the cooler months, that seemed especially tasty. Grilled cheese is good and grilled cheese with just a few bacon crumbles in it is also nice.

For breakfasts to make in advance: crepes! They are easy and very inexpensive to make and can be made with whole wheat and other healthful things and frozen. The fun part is the fillings for breakfast...of course there is the old eggs and bacon, but I love the fruit and cream cheese, fruit and ricotta cheese, or berries with whipped cream. You can fill them and freeze them or just freeze the crepes themselves, slice up the bananas, heat them, and pass the apricot syrup and even a dollop of whipped cream. Or how about apple chunks with raisins and cinnamon?"

I remember my dad telling me of breakfast on the farm-- his grandma would make bacon, sausage, eggs, fry things in bacon drippings, etc. It all sounded "bad for you" but I guess being farmers they "worked it all off" out in the fields. A lot of the folks lived to their '90s!

Raisin bread or english muffin, toasted and topped with peanut butter and some banana slices - either open faced or sandwich style

scrambled eggs, cheese and some green onions and or salsa wrapped in a tortilla wrap

pre-mixed fruit salad and a whole grain muffin
